How To Make Clear Ice


Create beautiful, clear ice without expensive equipment. Using a process called "directional freezing", I'll teach you how to make perfectly clear ice balls, cubes, and sticks. 

 


EQUIPMENT

  1. Small cooler
  2. Serrated knife
  3. Mallet
  4. Sphere ice mold
  5. Shaker tin

COCKTAIL RECIPES

Maple Old Fashioned

  • 2 oz (60ml) bourbon
  • 1 bar spoon of grade A maple syrup
  • 2 dashes angostura bitters
  • 2 dashes orange bitters

 

  1. Add bourbon to a mixing glass
  2. Measure maple syrup into bar spoon and drop into mixing glass
  3. Add bitters 
  4. Add ice and stir
  5. Pour into a rocks glass over a large ice cube or ball 
  6. Garnish with an orange twist

 

Tom Collins

  • 2 oz (60ml) of a London dry gin
  • 3/4 oz (25ml) of simple syrup
  • 3/4 oz (25ml) of fresh lemon juice
  • Club soda

 

  1. Add gin, simple syrup, and lemon juice to a shaker tin
  2. Add ice and shake 
  3. Double strain and pour into a collins glass over an ice stick
  4. Top with club soda
  5. Garnish with a lemon twist and a Luxardo cherry
