How To Use An iSi Whipper

The iSi cream whipper was originally designed for whipped cream, but has some amazing cocktail applications as well. In this video we learn the rapid infusion technique and how to make a delicious foam using this tool.  



EQUIPMENT

  1. iSi whipper (1/2 liter) 
  2. iSi cream chargers
  3. Cocktail set (includes Boston shaker, jigger, bar spoon, hawthorne strainer, fine mesh strainer, julep strainer, muddler, cocktail picks)
  4. Coupe glasses
  5. Rocks glasses
  6. Angled measuring jigger 
  7. Citrus juice squeezer

Turmeric Gin

  • 500ml (17oz) of Plymouth gin
  • 100g of fresh turmeric, sliced into 2mm thick disks
  • 2 iSi N20 chargers
  1. Add gin and sliced turmeric into iSi whipper
  2. Insert first cream charger, then shake
  3. Insert second cream charger, then shake
  4. Allow to sit for 2 minutes
  5. Hold whipper upright and vent rapidly into a cup and over a bowl to catch any liquid
  6. Strain into a bottle and store in fridge
  7. Best if consumed within a week, otherwise flavor fades 

Glo-Sour Cocktail

  • 2oz (60ml) of turmeric gin
  • .75oz (22.5ml) of fresh lime juice
  • Flat .75oz (20ml) of simple syrup
  • 3 drops saline solution
  • 2 dashes orange bitters
  1. Add all ingredients into a shaker tin with ice
  2. Shake for 15 seconds
  3. Double strain into a chilled coupe glass

Cadillac Foam

  • 2 egg whites, lightly beaten
  • 4oz (120ml) fresh orange juice
  • 2oz (60ml) Grand Marnier
  • 4 dashes of peach bitters
  • 2 iSi N20 chargers
  1. Add all liquid ingredients to iSi whipper
  2. Insert first cream charger, then shake
  3. Insert second cream charger, then shake
  4. Set aside

Margarita

  • 2oz (60ml) of blanco tequila
  • 1oz (30ml) of triple sec
  • 1oz (30ml) of lime juice
  • 1oz (30ml) of lemon juice
  • 1oz (30ml) of simple syrup
  • Red or black Hawaiian sea salt
  1. Add all ingredients into a shaker tin with ice
  2. Shake for 15 seconds
  3. Double strain into a chilled rocks glass
  4. Top with your Cadillac foam
  5. Garnish with a pinch of sea salt
